Ramen |
You finish your noodles at a ramen shop in Hakata, and there is still a bowl of hot soup in front of you. So you ask for more noodles. Only noodles.
That is kaedama (替え玉), roughly "a replacement ball." It is said to have started in Hakata, Fukuoka, and costs around 100 to 200 yen.
The reason is the noodles. Hakata ramen uses very thin noodles that soften quickly in hot pork-bone soup. So you finish them first, keep the soup, and order a fresh batch. Many shops let you choose the firmness with set words, such as "kata" for firm.
Go north to Sapporo and the noodles get thicker, the soup turns to miso. In Japan, many of us do not think of ramen as one dish. It changes with the town.
