Ramen in Sapporo and ramen in Hakata feel like two different foods.
Sapporo is known for miso ramen, ramen in a soup seasoned with fermented soybean paste. It is said to have been born there after World War II.
Winters are cold, and the usual story is that people wanted a soup richer than soy sauce or salt, one that stays hot. Vegetables are stir-fried in lard and garlic, then simmered with pork bone broth and miso. The noodles are thick and wavy.
Hakata goes the other way. Pork bones boil for hours into a dense broth, with thin, straight noodles that cook fast and are eaten before they go soft.
Many of us in Japan name a ramen by its town. The name alone tells you what to expect.
