Ramen |

You lift your chopsticks, and there it is on top of the ramen: a small white disc with a pink spiral. Many visitors ask what it is.

It is narutomaki, roughly "Naruto roll." It is a kind of kamaboko, or fish cake. White fish is ground into a paste and seasoned with salt, sugar, sake, mirin and egg white. Then it is shaped into a log, given its color with red food coloring, and steamed or boiled.

The name is said to come from the whirlpools of the Naruto Strait, between Awaji Island and Shikoku. When you slice it, the swirl looks like one of them.

In Japan, many of us hardly notice it anymore. It turns up in udon and soba too, a small spiral floating quietly in the broth.
