かん水

Ramen | かん水

Pick up ramen noodles and two things stand out. They are yellow, and they bounce back when you bite.

The reason is kansui, an alkaline water. Its main ingredients are potassium carbonate and sodium carbonate.

Wheat flour holds flavonoid pigments, and kansui turns them a pale yellow. It also gives the noodles their springy bite.

In Japan, the industry's labeling rules define chukamen, the noodles used for ramen, as wheat flour kneaded with kansui.

Many of us eat ramen for years without once asking why the noodles are that color.
