Japanese Food | 出汁

The same bowl of kitsune udon can look almost black in Tokyo and nearly clear in Osaka.

The difference starts with dashi, the stock under almost everything in Japanese cooking. In the Kanto region around Tokyo, it leans on katsuobushi (dried bonito flakes) and dark soy sauce, so the broth is deep in color and strong in taste.

In the Kansai region around Osaka, the base is kombu kelp, often joined by small dried sardines, and it is finished with light soy sauce. The color stays pale.

People say "soba in the east, udon in the west." Kitsune udon, topped with fried tofu, is said to have been born in Osaka.

In Japan, many of us have a quiet opinion about which broth tastes like home.
